Cucumber Tea Sandwiches

Peel and slice an English hothouse cucumber as thin as possible. Place in a colander and sprinkle with a small amount of white vinegar and salt. Place a plate and unopened can of something on top to weigh it down. Leave to drain for at least 30 minutes. Place cucumber on paper towels and press out any remaining liquid. Spread white bread with softened butter and cover with cucumber slices, sprinkle lightly with dill. Top with second slice of buttered bread, trim crusts and cut into four squares, triangles or fingers. Optional: use cream cheese instead of butter. Makes 36 to 40 quarters

Egg Salad Sandwiches

Combine all ingredients well, chill, then spread thinly on buttered slices of bread.  Trim crusts and cut into desired shapes.
